Choc Chips Cookies

Ingredients
60 ml (¼ cup) maple syrup
100 g (1/2 cup) butter, melted
1 egg, whisked
150 g (1 1/2 cup) rolled oats
70 g (1/2 cup) white spelt flour
1 tsp baking powder
1 tsp vanilla powder
1/4 tsp salt
1 tbsp white chia seeds
70 g (1/2 cup) raw choc chips (minimum 70%)
Method
- Preheat oven to 180 C and line baking tray with parchment paper.
- In a large bowl, combine maple syrup, butter and egg until well combined.
- Add dry ingredients in another bowl and then combine the two.
- Mix in chia and choc chips and let sit for 5-10 minutes to firm up.
- Shape into balls of desired size and press down lightly with a fork to form a cookie.
- Bake for 10-15 minutes or until golden. Perfect for batch cooking and freezing.
